Ingredients
  

  • 2 large onions, sliced
  • 3 tablespoons unsalted butter
  • 2 cups vegetable broth Substitute with beef broth for added richness.
  • 1 cup long-grain rice
  • 1 teaspoon dried thyme
  • 1 teaspoon sugar
  • 1/2 cup grated Gruyère cheese
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley

Instructions
 

  • In a large pot, melt the butter over medium heat. Add the sliced onions and sugar, stirring to coat the onions in the butter.
  • Cook the onions for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.
  • Add the dried thyme, salt, and pepper, mixing well. Pour in the vegetable broth and bring the mixture to a gentle boil.
  • Stir in the rice, reduce the heat to low, and cover the pot. Let it simmer for about 15-20 minutes or until the rice is cooked and has absorbed the liquid.
  • Once cooked, remove from heat and fluff the rice with a fork. Stir in half of the grated Gruyère cheese until melted.
  • Serve the rice in bowls, topped with the remaining Gruyère cheese and garnished with fresh parsley.

Notes

For added richness, you may use beef broth instead of vegetable broth.
You can also add some croutons for crunch or a splash of sherry or white wine while cooking the onions for extra depth of flavor.
This dish can be enjoyed as a main course or a side dish.
