Ingredients
  

  • 4 medium onions, thinly sliced About 500g.
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cups beef or vegetable broth 1 liter.
  • 1 cup water 240ml.
  • 1 teaspoon dried thyme
  • 1 teaspoon sugar
  • to taste salt
  • to taste pepper
  • 1 package gnocchi About 500g.
  • 1 cup shredded Gruyère cheese About 100g.
  • fresh parsley, chopped For garnish.

Instructions
 

  • In a large pot, heat the olive oil and butter over medium heat. Once melted, add the sliced onions.
  • Cook the onions slowly, stirring frequently, for about 15 minutes until they are fully caramelized and golden brown.
  • Add the sugar, thyme, salt, and pepper to the onions. Stir to combine.
  • Pour in the broth and water, scraping the bottom of the pot to release any flavorful brown bits. Bring the mixture to a boil.
  • Add the gnocchi to the boiling broth and cook according to the package directions, usually around 2-3 minutes, until they float to the surface.
  • Taste the soup and adjust the seasoning if necessary.
  • Serve the soup in bowls, topped with shredded Gruyère cheese and a sprinkle of fresh parsley.

Notes

For extra depth of flavor, you can add a splash of white wine to the onions before adding the broth.
This soup can be made vegetarian by using vegetable broth and omitting the cheese or substituting with a plant-based cheese.
Leftovers can be stored in the refrigerator for up to 3 days but may thicken; add more water or broth when reheating.
