Ingredients
  

  • 8 slices brioche or thick-cut bread
  • 200 grams feta cheese, crumbled
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon olive oil or butter (for frying)
  • 1/2 cup honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 tablespoon lemon juice

Instructions
 

  • In a mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  • Heat a frying pan over medium heat and add olive oil or butter to coat the pan.
  • Dip each slice of brioche into the egg mixture, ensuring both sides are soaked. Place the soaked bread into the heated pan.
  • Cook each slice for about 3-4 minutes on each side or until golden brown and slightly crispy. Remove from the pan and keep warm.
  • For the spiced honey syrup, combine honey, cinnamon, nutmeg, ginger, and lemon juice in a small saucepan. Heat over low medium heat, stirring until fully combined and warmed through, about 3-5 minutes.
  • To serve, layer the French toast on a plate, sprinkle crumbled feta on top, and drizzle generously with the warm spiced honey syrup.

Notes

You can adjust the amount of spices in the honey syrup to your liking.
This dish pairs wonderfully with fresh fruits or a dollop of yogurt on the side.
For an extra kick, consider adding a pinch of cayenne pepper to the honey syrup for a bit of heat.
