- 1 cup cream cheese softened
- 1 cup sour cream
- 1 cup mayonnaise
- 1 cup shredded cotija cheese or feta cheese
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon lime juice
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper optional for extra heat
- Fresh cilantro for garnish, optional
- Tortilla chips for serving
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.
Add in the corn, shredded cotija cheese, chili powder, garlic powder, lime juice, cumin, and cayenne pepper (if using). Stir until all ingredients are evenly incorporated.
Transfer the mixture to a baking dish, spreading it evenly.
Bake in the preheated oven for about 20 minutes, or until heated through and the top is slightly golden.
Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired.
Serve warm with tortilla chips.
For a smoky flavor, consider adding smoked paprika or chipotle powder.
You can also include diced jalapeños for added spice.
