Ingredients
  

  • 1 cup pumpkin puree canned or fresh
  • 1 ½ cups cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin spice
  • 8 ounces dark chocolate chopped
  • 1 tablespoon coconut oil optional, for smoothness
  • ¼ cup crushed graham crackers for rolling

Instructions
 

  • In a mixing bowl, combine the pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, and pumpkin spice. Mix until smooth and well incorporated.
  • Use a spoon to scoop out small portions of the mixture and roll them into balls about 1 inch in diameter. Place the rolled balls on a cookie sheet or plate lined with parchment paper.
  • Place the truffles in the refrigerator to set for about 15 minutes.
  • Melt the dark chocolate in a melting pot or microwave, stirring in between until fully melted. If desired, stir in coconut oil for a smoother consistency.
  • Once the truffles have chilled, dip each one into the melted chocolate, ensuring they are fully coated. Use a fork to assist in the dipping process.
  • After dipping, place the chocolate-coated truffles back on the parchment-lined cookie sheet. Roll them in crushed graham crackers before the chocolate sets.
  • Refrigerate the truffles again for about 30 minutes, or until the chocolate is completely set.
  • Serve and enjoy!

Notes

These truffles can be stored in an airtight container in the refrigerator for up to a week.
You can customize the coating by using white chocolate or colored chocolate melts if desired.
Feel free to sprinkle some additional pumpkin spice on top before serving for an extra festive touch.
