In a mixing bowl, combine the pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, and pumpkin spice. Mix until smooth and well incorporated.
Use a spoon to scoop out small portions of the mixture and roll them into balls about 1 inch in diameter. Place the rolled balls on a cookie sheet or plate lined with parchment paper.
Place the truffles in the refrigerator to set for about 15 minutes.
Melt the dark chocolate in a melting pot or microwave, stirring in between until fully melted. If desired, stir in coconut oil for a smoother consistency.
Once the truffles have chilled, dip each one into the melted chocolate, ensuring they are fully coated. Use a fork to assist in the dipping process.
After dipping, place the chocolate-coated truffles back on the parchment-lined cookie sheet. Roll them in crushed graham crackers before the chocolate sets.
Refrigerate the truffles again for about 30 minutes, or until the chocolate is completely set.
