Ingredients
  

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning (about 1 oz)
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 can corn, drained (15 oz)
  • 1 can diced tomatoes with green chilies (10 oz)
  • 2 cups shredded cheddar cheese
  • 6 cups Doritos (about one full bag)
  • 1 cup sour cream
  • 1/2 cup green onions, sliced (for garnish)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef and chopped onion until browned. Drain excess fat.
  • Add the taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir well and cook for an additional 5 minutes until heated through.
  • In a mixing bowl, combine half of the Doritos (3 cups) with the sour cream and half of the shredded cheese (1 cup). Stir to combine.
  • In a greased 9x13 inch baking dish, layer half of the meat mixture on the bottom, followed by the Dorito and cheese mixture.
  • Add the remaining meat mixture on top and finish with the rest of the Doritos (3 cups) and the remaining shredded cheese (1 cup).
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for 5 minutes before serving. Garnish with sliced green onions if desired.

Notes

Feel free to customize this recipe by adding your favorite ingredients such as sliced jalapeños or olives.
For a lighter option, consider using ground turkey or chicken.
This casserole can be prepared a day in advance and stored in the refrigerator before baking. Just add a few extra minutes to the cooking time.
