Ingredients
  

  • 1 lb ground beef (or turkey) Can substitute with ground chicken or black beans for a vegetarian option.
  • 1 small onion, diced
  • 1 packet taco seasoning About 1 oz.
  • 1 can black beans 15 oz, drained and rinsed.
  • 1 can corn 15 oz, drained.
  • 1 can diced tomatoes with green chilies 10 oz, undrained.
  • 1 can tomato sauce 8 oz.
  • 3 cups uncooked spaghetti Break in half before adding to the crockpot.
  • 2 cups beef broth (or water)
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • to taste salt
  • to taste pepper
  • optional toppings Sour cream, chopped cilantro, sliced jalapeƱos.

Instructions
 

  • In a large skillet over medium heat, brown the ground beef (or turkey) along with the diced onion until the meat is cooked through. Drain any excess fat.
  • Stir in the taco seasoning and mix well to coat the meat evenly.
  • In the crockpot, combine the cooked meat and onion mixture with black beans, corn, diced tomatoes with green chilies, tomato sauce, and beef broth. Mix to combine thoroughly.
  • Break the uncooked spaghetti in half and add it to the crockpot, pushing it down into the liquid so it is submerged.
  • Cover the crockpot and cook on low for 6 hours, or until the spaghetti is cooked and tender.
  • Just before serving, stir in half of the shredded cheese until melted and combined.
  • Serve the Taco Spaghetti in bowls, topping with the remaining cheese and any optional toppings you prefer.

Notes

You can substitute the ground beef with ground chicken, turkey, or even black beans for a vegetarian option.
Feel free to add other vegetables, such as bell peppers or zucchini, for added nutrition.
Make sure to stir the spaghetti occasionally while cooking to ensure even cooking and prevent it from sticking.
