  • 2 pounds boneless skinless chicken breasts or thighs cut into 1-inch pieces
  • 1 1/2 pounds red potatoes chopped
  • 1/2 cup Parmesan cheese grated
  • 3/4 cup Parmesan cheese shredded
  • 3 to 4 cloves garlic minced
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon salt or more to taste
  • 1/2 teaspoon pepper
  • 3/4 cup low-sodium chicken broth for Instant Pot

  • Lightly grease the inside of the crockpot with nonstick spray or oil.
  • Add chopped red potatoes to the bottom of the crockpot.
  • Layer the chicken pieces on top of the potatoes.
  • Sprinkle minced garlic, garlic powder, Italian seasoning, salt, and pepper evenly over everything.
  • Drizzle olive oil over the ingredients.
  • Add the grated Parmesan cheese across the top.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken and potatoes are tender.
  • In the last few minutes of cooking, sprinkle the shredded Parmesan cheese and let melt with the lid on.
  • Carefully stir everything before serving to coat in cheesy garlic sauce.

Notes

For a crisp cheesy top, broil the finished dish for 2-3 minutes in the oven after slow cooking. You can also garnish with fresh parsley or extra grated Parmesan.
