- 2 lbs boneless, skinless chicken breasts
- 1 packet (1 oz) taco seasoning
- 1 cup chicken broth
- 1 can (15 oz) black beans drained and rinsed
- 1 can (15 oz) corn drained
- 1 cup salsa
- 6-12 pieces taco shells depending on size
- 1 cup shredded cheese optional topping
- 2 cups lettuce optional topping
- 1 cup diced tomatoes optional topping
- 1 cup sour cream optional topping
- 1 piece avocado diced, optional topping
- 1/4 cup cilantro chopped, optional topping
Place the chicken breasts in the crockpot.
In a small bowl, mix the taco seasoning with the chicken broth.
Pour the seasoning mixture over the chicken in the crockpot.
Add the black beans, corn, and salsa over the chicken.
Cover the crockpot and cook on low for about 6 hours or high for about 4 hours, until the chicken is fully cooked and tender.
After cooking, shred the chicken using two forks right in the crockpot and stir to mix with the other ingredients.
Serve the chicken mixture in taco shells and allow everyone to add their favorite toppings.
You can adjust the spice level by adding jalapeƱos or using a spicy salsa.
Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
For a healthier option, serve the chicken mixture on lettuce wraps instead of taco shells.
