Crockpot Chicken Giardiniera Sandwiches

Spicy, tangy shredded chicken with giardiniera and melty provolone cheese piled on soft-crusted French rolls. A slow-cooked sandwich bursting with flavor!

Main ingredients

  • 3 boneless skinless chicken breasts fresh or thawed
  • 3 bell peppers sliced, any color
  • 1 cup hot giardiniera adjust for spice level
  • 1 medium onion sliced
  • 1 tbsp italian seasoning
  • 2 cups chicken stock
  • 6 slices provolone cheese
  • 6 french rolls split

  • Place chicken in the base of the crockpot.
  • Add sliced onions and bell peppers on top of the chicken.
  • Pour giardiniera over the vegetables.
  • Sprinkle italian seasoning evenly over the top.
  • Pour in the chicken stock until the contents are just covered.
  • Cover and cook on low for 6 to 7 hours or until chicken is tender.
  • Shred the chicken in the crockpot using two forks.
  • Stir well to mix the shredded chicken with the spicy broth.
  • Preheat oven to 350°F.
  • Split the rolls, place a slice of provolone cheese on each, fill with the chicken mixture.
  • Bake for 5 to 7 minutes until cheese is melted and rolls are toasted. Serve hot.

Notes

Use mild giardiniera if you prefer less heat. Great for leftovers — reheat with a splash of stock and toast rolls fresh!
