Ingredients
  

  • 4 pieces boneless, skinless chicken breasts Approximately 1.5 pounds.
  • 1 cup chicken broth
  • 1 cup diced tomatoes Canned or fresh.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil Optional.

Instructions
 

  • Lay the chicken breasts at the bottom of the crockpot.
  • In a bowl, combine the chicken broth, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and black pepper. If using olive oil, add it to this mixture.
  • Pour the mixture over the chicken breasts in the crockpot, ensuring they are well covered.
  • Cover the crockpot with its lid and cook on low for 6 hours, or until the chicken is cooked through and tender.
  • Once cooking is complete, shred the chicken directly in the crockpot using two forks, mixing it with the sauce.
  • Serve warm, paired with rice, pasta, or steamed veggies.
