Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1/2 cup pesto sauce
  • 1 tablespoon olive oil
  • to taste none salt
  • to taste none pepper
  • 1/2 cup grated Parmesan cheese
  • none none fresh basil leaves For garnish (optional).

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper on both sides.
  • Place the chicken breasts in the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
  • In the same skillet, reduce the heat to low. Add the heavy cream and pesto sauce, and whisk until smooth and combined.
  • Stir in the grated Parmesan cheese until melted and well incorporated.
  • Return the cooked chicken breasts to the skillet, covering them with the creamy pesto sauce. Simmer for an additional 2-3 minutes to warm the chicken through.
  • Remove from heat and garnish with fresh basil leaves if desired.
  • Serve hot with your choice of side (pasta, rice, or vegetables).

Notes

For a lighter version, you can substitute half-and-half for the heavy cream.
If you prefer a bit of heat, consider adding a pinch of red pepper flakes to the sauce.
This dish pairs well with a simple green salad or garlic bread. Enjoy!
