- 1.5 pounds boneless, skinless chicken breasts
- 1 cup heavy cream Can substitute with half-and-half for a lighter version.
- 1/2 cup pesto sauce
- 1 tablespoon olive oil
- to taste none salt
- to taste none pepper
- 1/2 cup grated Parmesan cheese
- none none fresh basil leaves For garnish (optional).
Heat the olive oil in a large skillet over medium heat.
Season the chicken breasts with salt and pepper on both sides.
Place the chicken breasts in the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, reduce the heat to low. Add the heavy cream and pesto sauce, and whisk until smooth and combined.
Stir in the grated Parmesan cheese until melted and well incorporated.
Return the cooked chicken breasts to the skillet, covering them with the creamy pesto sauce. Simmer for an additional 2-3 minutes to warm the chicken through.
Remove from heat and garnish with fresh basil leaves if desired.
Serve hot with your choice of side (pasta, rice, or vegetables).
For a lighter version, you can substitute half-and-half for the heavy cream.
If you prefer a bit of heat, consider adding a pinch of red pepper flakes to the sauce.
This dish pairs well with a simple green salad or garlic bread. Enjoy!
