- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
Stir in the minced garlic, dried basil, and dried oregano. Cook for another minute, until fragrant.
Add the crushed tomatoes and vegetable broth to the pot. Stir to combine and bring to a simmer. Cook for 15 minutes, allowing the flavors to meld.
Remove the pot from heat. Using a blender or immersion blender, carefully blend the soup until smooth.
Return the blended soup to the pot. Stir in the heavy cream and grated Parmesan cheese. Heat over low heat until warmed through, about 5 minutes.
Season with salt and pepper to taste. Serve hot, garnished with fresh basil leaves if desired.
