Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, diced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • 4 ounces ramen noodles
  • 2 cups baby spinach
  • 1 cup mushrooms, sliced
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Optional toppings: soft-boiled eggs, sesame seeds, chili flakes

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced chicken and sauté until cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  • In the same pot, add the minced garlic and ginger, sautéing for 1 minute until fragrant.
  • Pour in the chicken broth and bring to a boil. Reduce the heat and stir in the coconut milk and soy sauce.
  • Add the sliced mushrooms and cook for 5 minutes until tender.
  • Stir in the ramen noodles and cook for an additional 3-4 minutes, or until the noodles are al dente.
  • Add the cooked chicken back into the pot, along with the baby spinach. Stir until the spinach is wilted and everything is heated through.
  • Season with salt and pepper to taste. Serve hot in bowls and garnish with sliced green onions and optional toppings, if desired.

Notes

You can customize this soup by adding your favorite vegetables or proteins. If you prefer a noodle soup with a thicker broth, consider adding a cornstarch slurry. For a spicier kick, include some chili oil or paste in the broth. Enjoy your creamy ramen!
