- 1 pound fresh spinach Washed and chopped.
- 2 tablespoons unsalted butter
- 1 small onion Finely chopped.
- 2 cloves garlic Minced.
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- Salt To taste.
- Pepper To taste.
In a large skillet, melt the butter over medium heat.
Add the chopped onion to the skillet and sauté for about 3-4 minutes, or until translucent.
Stir in the minced garlic and cook for an additional 1 minute, making sure not to burn it.
Add the chopped spinach to the skillet, stirring well to combine. Cook for about 5-7 minutes, until the spinach is wilted and most of the liquid has evaporated.
Lower the heat and pour in the heavy cream. Stir well to combine.
Gradually add the grated Parmesan cheese, stirring continuously until melted and creamy.
Add the ground nutmeg, and season with salt and pepper to taste.
Continue to heat for another 2-3 minutes until the mixture is warmed through and slightly thickened.
Remove from heat and serve warm.
If using frozen spinach, make sure to thaw and drain it well before using.
For a lighter version, you can substitute milk for the heavy cream, though the consistency will be different.
This dish can be prepared ahead of time and reheated before serving. Just add a splash of cream if it thickens too much while stored.
