Begin by boiling a large pot of salted water. Add the fettuccine pasta and cook according to package instructions until al dente. Once cooked, drain the pasta in a colander and set aside.
In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened.
Add the minced garlic to the skillet and continue to sauté for an additional minute until fragrant.
Stir in the crawfish tails, Cajun seasoning, paprika, salt, and black pepper. Cook for about 5 minutes until the crawfish is heated through.
Pour in the heavy cream and chicken broth. Stir to combine, and bring the mixture to a gentle simmer. Allow it to cook for 5-7 minutes until the sauce thickens slightly.
Add the cooked fettuccine pasta to the skillet and gently toss to combine until the pasta is evenly coated with the creamy sauce.
Remove from heat and garnish with fresh parsley before serving.
