- 2 cups water
- 1 cup granulated sugar
- 1 16-ounce can whole cranberry sauce
- 1 3-ounce package cherry or raspberry gelatin (jello)
- 1 cup chopped celery
- 1 cup crushed pineapple, drained
- 1 cup chopped walnuts or pecans Optional
- 1 cup mini marshmallows Optional
In a medium saucepan, bring 2 cups of water to a boil. Once boiling, remove from heat and stir in 1 cup of sugar until dissolved.
Add the can of whole cranberry sauce and the gelatin to the saucepan, mixing well until thoroughly combined.
Allow the mixture to cool to room temperature, then stir in the chopped celery, crushed pineapple, chopped walnuts or pecans (if using), and mini marshmallows (if using).
Pour the mixture into a 9x13-inch glass dish or mold, smoothing the top with a spatula.
Cover and refrigerate for at least 4 hours or until the salad is set completely.
Once set, cut into squares (if in a dish) or unmold carefully onto a serving platter.
Feel free to adjust the add-ins, such as swapping different nuts or omitting the marshmallows for a healthier option.
This salad can be made up to a day in advance, making it a great preparation choice for holiday gatherings or family dinners.
