- 2 cups fresh or frozen cranberries If frozen, thawed.
- 1 cup granulated sugar
- 1/2 cup cream cheese Softened.
- 1 cup whipped topping
- 1 cup mini marshmallows
- 1/2 cup chopped walnuts or pecans Optional.
- 1/2 cup pineapple tidbits Drained.
Rinse the cranberries and remove any stems or imperfections.
In a large mixing bowl, combine the cranberries and sugar. Toss them together and let them sit for about 10 minutes to macerate.
In another bowl, use a hand mixer or whisk to mix the softened cream cheese until smooth and creamy.
Gently fold the whipped topping into the cream cheese until well combined.
Add the cranberry-sugar mixture to the cream cheese and whipped topping mixture. Fold until evenly distributed, being careful not to crush the cranberries.
Add the mini marshmallows, chopped nuts (if using), and pineapple tidbits to the mixture. Stir gently until incorporated.
Transfer the mixture into a serving dish and refrigerate for at least 1 hour before serving to allow the flavors to meld and the salad to firm up.
This salad can be made a day in advance for convenience.
Feel free to customize the recipe by adding different types of nuts or fruits based on your preferences.
Adjust the sweetness by using less sugar if desired, especially if the cranberries are sweetened.
