- 2 cups fresh or frozen cranberries About 240g.
- 1 cup sugar About 200g.
- 1 cup mini marshmallows About 100g.
- 1 cup heavy cream 240ml.
- 1 teaspoon vanilla extract
- 1 cup chopped pecans or walnuts About 120g. You can substitute with sunflower seeds or omit entirely if preferred.
- 1/2 cup sour cream 120ml.
If using fresh cranberries, rinse them and pick up any stems. If using frozen, thaw and drain them.
In a mixing bowl, combine the cranberries and sugar. Stir well and let it sit for about 10 minutes to allow the cranberries to release some juice and become sweetened.
In another bowl, whip the heavy cream and vanilla extract until soft peaks form using a whisk or an electric mixer.
Gently fold in the sour cream and mini marshmallows into the whipped cream mixture.
Add the cranberry mixture to the whipped cream and fold until well combined.
Lastly, fold in the chopped pecans or walnuts for added crunch.
Transfer the mixture into a serving dish and refrigerate for at least 1 hour before serving.
You can substitute the nuts with sunflower seeds or omit them entirely if you prefer a nut-free version.
Feel free to adjust the sugar according to your taste, especially if you prefer a less sweet dessert.
Add a sprinkle of cinnamon or nutmeg on top for extra flavor before serving.
