- 1 sheet puff pastry thawed
- 6 ounces brie cheese cut into 12 small pieces
- 1/2 cup cranberry sauce store-bought or homemade
- 1 egg beaten egg for egg wash
- 1 tablespoon fresh rosemary chopped, optional

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
On a floured surface, roll out the puff pastry to about 1/8-inch thickness. Cut the pastry into 12 equal squares (approximately 3x3 inches).
Place one piece of brie cheese in the center of each pastry square. Top each piece with about 1 tablespoon of cranberry sauce. If using, sprinkle a little chopped rosemary on top of the cranberry sauce.
Fold the corners of the pastry over the filling to create a package and press the edges to seal. Ensure the filling is enclosed well.
Place the pastry bites on the prepared baking sheet, making sure they are spaced apart. Brush the tops with the beaten egg for a golden-brown finish.
Bake in the preheated oven for about 15 minutes or until the pastry is puffed and golden brown.
Remove from the oven and allow to cool slightly before serving.
You can make the cranberry sauce from scratch if desired, by cooking fresh or frozen cranberries with sugar and a splash of orange juice until they burst and thicken.
Feel free to experiment with different types of cheese or additional herbs to customize the flavors.
These bites are best served warm, but can be enjoyed at room temperature as well.
