Equipment

  • 1 mixing bowl
  • 1 measuring cups and spoons
  • 1 whisk
  • 1 zip-top bag or container for marinating
  • 1 deep frying pan or Dutch oven
  • 1 cooking thermometer (optional)
  • 1 paper towels
  • 1 serving platter

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup pickle juice
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 large egg
  • 2 teaspoons powdered sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • to taste amount vegetable oil for frying

Instructions

  • In a mixing bowl, combine the chicken pieces with pickle juice. Cover and refrigerate for at least 30 minutes to marinate.
  • In another bowl, whisk together the flour, powdered sugar, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
  • In a separate bowl, combine the milk and egg, whisking until well blended.
  • Remove the marinated chicken from the pickle juice and pat dry with paper towels.
  • Heat vegetable oil in a deep frying pan or Dutch oven to 350°F (175°C).
  • Dredge each piece of chicken in the flour mixture, shaking off excess, then dip into the milk-egg mixture, and finally coat again in the flour mixture. Ensure each piece is evenly coated.
  • Carefully place the coated chicken nuggets into the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes on each side or until golden brown and fully cooked (internal temperature should reach 165°F or 74°C).
  • Remove the fried chicken nuggets and place them on a plate lined with paper towels to absorb excess oil.
  • Serve hot with your favorite dipping sauces.

Notes

Feel free to adjust the spice levels to your liking by adding more or less cayenne pepper.
For a healthier option, consider baking the nuggets at 400°F (200°C) for about 20 minutes, flipping halfway through.
Leftover nuggets can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer for best results.
