Ingredients
  

  • 2.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In another bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy (about 2-3 minutes).
  • Beat in the egg and vanilla extract until well combined.
  • Gradually mix the dry ingredients into the wet ingredients, stirring until just combined. Avoid overmixing.
  • Roll the dough into balls, about 1 inch in diameter, and arrange them on the prepared baking sheets, spacing them a few inches apart.
  • Optionally, flatten the dough balls slightly using the bottom of a glass or a cookie cutter.
  • Bake in the preheated oven for 8-10 minutes. The edges should be firm, but the centers will look slightly soft.
  • Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a cooling rack to cool completely.
  • For added decoration, consider dusting the cooled cookies with powdered sugar.
