Ingredients
  

  • 2 cups rolled oats
  • 1 cup almond butter (or peanut butter)
  • 1/2 cup honey (or maple syrup) For a vegan option, substitute honey with maple syrup.
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup dark chocolate chips
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts or seeds (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the rolled oats, almond butter, honey, cocoa powder, salt, and vanilla extract. Mix until thoroughly combined and the ingredients form a sticky dough.
  • Stir in the dark chocolate chips and any optional nuts or seeds you wish to add.
  • Line the baking dish with parchment paper for easy removal if desired. Spread the oatmeal mixture evenly into the prepared dish, pressing it down firmly to create an even layer.
  • Bake in the preheated oven for 20-25 minutes, or until the edges start to pull away from the sides of the dish and the bars feel firm.
  • Allow the bars to cool completely in the baking dish before cutting them into 12 squares.

Notes

These chocolate oatmeal bars can be stored in an airtight container at room temperature for up to a week.
Feel free to customize them by adding dried fruits, different nuts, or using different types of nut butter.
For a vegan option, substitute honey with maple syrup.
