Ingredients
  

  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease the muffin tin or line it with paper liners.
  • In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
  • In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and fold gently until just combined. Be careful not to overmix.
  • Fold in the chocolate chips until evenly distributed throughout the batter.
  • Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.
  • Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, you can substitute half the chocolate chips with nuts or add a sprinkle of sea salt on top before baking.
Store any leftover muffins in an airtight container at room temperature for up to 3 days or freeze them for longer storage.
