- 100 g dark chocolate (70% cocoa)
- 2 tablespoons unsalted butter
- 2 large eggs, separated Egg whites and yolks should be separated carefully.

- 1/2 cup heavy cream

Melt the dark chocolate and butter together in a microwave-safe bowl or over a double boiler until smooth. Set aside to cool slightly.
In a separate bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar while continuing to whisk until glossy and stiff peaks form. Set aside.
Combine the egg yolks with the melted chocolate mixture and mix until well combined.
Gently fold a third of the whipped egg whites into the chocolate mixture using a rubber spatula. Then, carefully fold in the remaining egg whites, ensuring not to deflate the mixture.
Whisk the heavy cream in a separate bowl until soft peaks form, then gently fold the whipped cream into the chocolate mixture until smooth.
Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours to set.
Serve chilled, garnished with whipped cream or chocolate shavings if desired.
Make sure the chocolate mixture is cool before adding the egg yolks to prevent cooking them.
Egg whites and yolks should be separated carefully; even a small amount of yolk can affect the texture of the mousse.
If you prefer a sweeter mousse, you can adjust the amount of sugar to taste.
