Wash the strawberries gently under cold water and pat them dry with a paper towel. Ensure they are completely dry, as water can cause the chocolate to seize.
Line a baking sheet with parchment paper to prevent sticking.
In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil (if using).
Microwave the chocolate on high in 30-second intervals, stirring between each interval until the chocolate is completely melted and smooth (this typically takes about 1-2 minutes).
Hold a strawberry by the stem and dip it into the melted chocolate, making sure to coat it well while leaving the top bare.
Allow any excess chocolate to drip off, then place the chocolate-covered strawberry on the prepared baking sheet.
Repeat the dipping process for the remaining strawberries.
Optional: After dipping, you can drizzle some melted white chocolate over the dipped strawberries for added decoration.
Refrigerate the strawberries for 15-30 minutes, or until the chocolate has hardened.
Serve chilled or at room temperature and enjoy!
