Preheat your oven to 325°F (160°C). Grease the bottom and sides of a 9-inch springform pan and line the bottom with parchment paper.
In a mixing bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Mix until the mixture resembles wet sand.
Press the crumb mixture firmly into the bottom of the prepared pan to form the crust. Bake in the preheated oven for 10 minutes. Remove and let cool.
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add sour cream, powdered sugar, eggs, and vanilla extract. Beat until fully incorporated and smooth.
Melt the dark chocolate chips in a saucepan over low heat, stirring until smooth. Allow it to cool slightly, then fold it into the cheesecake mixture.
Pour the cheesecake mixture over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes, or until the cheesecake is set in the center and slightly jiggles.
Remove the cheesecake from the oven and allow it to cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight, to set completely.
Before serving, top with cherry pie filling, spreading it evenly over the cheesecake.
Slice and serve chilled. Enjoy your Chocolate Cherry Cheesecake!
