- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 count carrots, diced
- 2 stalks celery, diced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 6 cups chicken broth
- 2 cups cooked chicken, shredded You can use rotisserie chicken for quicker preparation.
- 1 package (9 oz) cheese tortellini
- 2 cups fresh spinach

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
Stir in the minced garlic, diced carrots, and diced celery. Sauté for another 3-4 minutes until the vegetables are tender.
Add the dried basil and oregano to the pot, stirring to combine.
Pour in the chicken broth and bring to a boil. Lower the heat and let it simmer for 5 minutes.
Add the shredded chicken and bring the soup back to a boil. Stir in the tortellini and cook according to package instructions (usually about 3-5 minutes).
In the last minute of cooking, add the fresh spinach and stir until it wilts.
Season the soup with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese if desired.
You can use rotisserie chicken for a quicker preparation.
For a creamier soup, you can add a splash of heavy cream before serving.
This soup can be frozen, but the tortellini may become softer upon reheating.
