Ingredients
  

  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • Juice of 1 lemon
  • Fresh parsley chopped for garnish

Instructions
 

  • Start by cutting the chicken breasts into 1-inch pieces and place them in a mixing bowl.
  • In a separate bowl, combine the grated Parmesan cheese, minced garlic, olive oil, salt, black pepper, Italian seasoning, and lemon juice. Mix well to form a marinade.
  • Pour the marinade over the chicken pieces. Stir until the chicken is fully coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  • Preheat your grill or grill pan to medium-high heat.
  • If using wooden skewers, soak them in water for 10 minutes before using to prevent burning.
  • Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
  • Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  • Remove the skewers from the grill and let them rest for a couple of minutes. Sprinkle with fresh parsley for garnish before serving.

Notes

You can add vegetables like bell peppers or cherry tomatoes to the skewers for added flavor and nutrition.
These skewers can also be baked in the oven at 400°F (200°C) for about 20 minutes if a grill is not available.
Serve with a side salad or a dipping sauce for extra flavor.
