  • 1 skewers soaked in water if wooden
  • 1 measuring cups and spoons
  • 1 blender or food processor for peanut sauce

Ingredients
  

  • 1 lb chicken breast, cut into 1-inch cubes
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, minced
  • 1 tablespoon lime juice
  • to taste salt and pepper
  • 1/2 cup creamy peanut butter
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons lime juice
  • 1 teaspoon red curry paste (optional, for heat)
  • 1/4 cup water (to thin sauce)

Instructions
 

  • In a mixing bowl, combine coconut milk, soy sauce, brown sugar, curry powder, garlic powder, ginger, lime juice, salt, and pepper. Mix well to create the marinade.
  • Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  • While the chicken is marinating, prepare the peanut sauce. In a blender or food processor, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, red curry paste, and water. Blend until smooth. Adjust the consistency by adding more water if needed. Set aside.
  • Preheat the grill or grilling pan over medium-high heat. Thread the marinated chicken onto skewers.
  • Grill the chicken skewers for about 5-7 minutes on each side or until fully cooked and slightly charred.
  • Serve the grilled chicken satay with the peanut sauce on the side for dipping.

Notes

For a vegetarian option, substitute chicken with firm tofu.
Garnish with chopped cilantro or crushed peanuts for extra flavor.
Serve with steamed jasmine rice or a side salad for a complete meal.
