Ingredients
  

  • 4 cups chicken broth
  • 2 cups water
  • 2 boneless skinless chicken breasts About 1 pound total.
  • 4 packs ramen noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • 2 cloves garlic, minced
  • 4 green onions, sliced
  • 2 soft-boiled eggs Optional.
  • 1 cup spinach or bok choy
  • 1 sheet nori, cut into strips Optional.
  • to taste salt and pepper

Instructions
 

  • In a large pot, combine the chicken broth and water. Bring to a simmer over medium heat.
  • Add the chicken breasts to the pot and simmer for about 15 minutes or until cooked through. Remove the chicken and let it rest.
  • In the same pot, whisk in the soy sauce, miso paste, sesame oil, ginger, and garlic. Let it continue to simmer for about 5 minutes.
  • In a separate skillet, cook the ramen noodles according to package instructions. Drain and set aside.
  • Shred the cooked chicken with a fork and return it to the broth. Season with salt and pepper to taste.
  • To serve, place a serving of cooked ramen noodles in a bowl, ladle the broth and chicken over the top, and add spinach or bok choy.
  • Top with green onions, a soft-boiled egg, and strips of nori for garnish.

Notes

To make soft-boiled eggs, boil them for about 6-7 minutes, then plunge them into ice water to stop the cooking process. Peel and slice in half before garnishing the ramen.
Feel free to customize your ramen with additional toppings such as mushrooms, corn, or bean sprouts based on your preference.
You can substitute with store-bought rotisserie chicken for a quicker option.
