Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded Can substitute turkey.
  • 1 cup frozen peas
  • 1 cup heavy cream Can substitute half-and-half for a lighter version.
  • 1/2 cup all-purpose flour
  • 1 cup milk
  • to taste salt
  • to taste pepper
  • 1 cup biscuit mix Optional, for topping.

Instructions
 

  • Heat the olive oil in a large stockpot or Dutch oven over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic, diced carrots, and celery. Cook for an additional 5 minutes until the vegetables begin to soften.
  • Add the dried thyme and rosemary, stirring to combine.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Once boiling, reduce the heat to a simmer. Add the shredded chicken and frozen peas, cooking for another 10 minutes.
  • In a separate bowl, whisk together the heavy cream, flour, and milk until smooth. Slowly pour this mixture into the soup, stirring continuously to avoid lumps.
  • Allow the soup to simmer for an additional 5-10 minutes until it thickens. Season with salt and pepper to taste.
  • If using biscuit mix, prepare the biscuits according to package instructions and bake them while the soup thickens.
  • Serve the soup hot, optionally topped with warm biscuits.

Notes

You can substitute cooked turkey for chicken if preferred.
For a lighter version, you can use half-and-half instead of heavy cream.
