- 12 ounces pasta (penne or rotini)
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts (cubed)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup onion (chopped)
- 1 cup carrots (diced)
- 1 cup celery (diced)
- 3 cups chicken broth
- 1 cup frozen peas
- 1 cup heavy cream
- 1 tablespoon dried thyme
- 1 tablespoon all-purpose flour (for thickening)
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the cubed chicken, salt, and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are soft, about 5-6 minutes.
Sprinkle the flour over the vegetables, and stir for about 1 minute. Gradually whisk in the chicken broth and bring to a simmer. Add the thyme and heavy cream, and stir until well combined. Allow the sauce to thicken for about 5 minutes.
Return the cooked chicken to the skillet, then add the cooked pasta and frozen peas. Stir until everything is well coated in the sauce and heated through. Cook for an additional 3 minutes.
