Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 14.5 ounces can diced tomatoes (with juices)
  • 4 cups chicken broth For added flavor, consider using homemade chicken broth.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes Optional
  • 1 cup uncooked pasta (such as ditalini or small shells)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • to taste salt and pepper Adjust seasoning as needed.
  • Fresh basil leaves for garnish Optional

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until soft and translucent.
  • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  • Add the chicken pieces to the pot and season with salt and pepper. Cook until browned, about 5-7 minutes.
  • Stir in the diced tomatoes (with their juices), chicken broth, dried oregano, dried basil, and red pepper flakes (if using). Bring the mixture to a boil.
  • Once boiling, add the uncooked pasta to the pot. Reduce the heat to a simmer and cook for about 10-12 minutes, or until the pasta is al dente.
  • Remove the pot from the heat and stir in the shredded mozzarella and grated Parmesan cheese until melted and well combined.
  • Taste and adjust the seasoning with more salt and pepper if needed.
  • Ladle the soup into bowls and garnish with fresh basil leaves if desired. Serve hot.

Notes

For added flavor, consider using homemade chicken broth.
You can add vegetables like spinach or zucchini for more nutrition.
This soup can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat before serving.
