Ingredients
  

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper any color
  • 2 cloves garlic, minced
  • 1/4 cup ketchup plus extra for topping
  • 2 large eggs
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon Worcestershire sauce

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, chopped onion, chopped bell pepper, minced garlic, ketchup, eggs, dried oregano, salt, black pepper, red pepper flakes (if using), and Worcestershire sauce.
  • Mix all the ingredients thoroughly until well combined, but do not overmix.
  • Transfer the mixture into a meatloaf pan or shape it into a loaf and place it on a baking sheet.
  • Spread a thin layer of ketchup on top of the meatloaf for added flavor and moisture.
  • Bake in the preheated oven for 60 minutes or until the internal temperature reaches 165°F (74°C).
  • Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
  • Serve warm with your choice of sides.

Notes

You can substitute ground turkey for the chicken if desired.
Feel free to add other chopped vegetables, such as carrots or zucchini, for added nutrition.
Serve with mashed potatoes, green beans, or a fresh salad for a complete meal.
