- 1 pound ground chicken
- 1 tablespoon vegetable oil
- 1 cup diced bell peppers (red and green)
- 1 cup diced mushrooms
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1 tablespoon chopped green onions (for garnish)
- 1 head butter lettuce or iceberg lettuce (leaves separated)
Heat the vegetable oil in a large skillet over medium heat.
Add the diced onions and minced garlic to the skillet. Sauté for about 2 minutes until fragrant and translucent.
Add the ground chicken to the skillet. Cook for about 5 minutes, breaking it apart with a spatula until browned and cooked through.
Stir in the diced bell peppers, diced mushrooms, soy sauce, hoisin sauce, sesame oil, and ground ginger. Cook for an additional 3-4 minutes, allowing the flavors to meld and the vegetables to soften.
Remove from heat and let the mixture cool slightly.
