- 2 cups cooked jasmine rice Preferably day-old.
- 1 lb boneless chicken breast, diced
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 large eggs, beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 green onion, chopped

Ensure your rice is cooked and prepared ahead of time, ideally a day prior, and refrigerated for better texture in fried rice.
Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the diced chicken breast and cook until it is no longer pink, about 5-6 minutes. Season with salt and pepper to taste. Remove the chicken from the pan and set it aside.
In the same wok, add the minced garlic and stir-fry for about 30 seconds until fragrant. Be careful not to burn it.
Add the mixed vegetables to the wok and cook for 2-3 minutes until they are tender. Push the vegetables to one side of the pan.
Pour the beaten eggs into the empty side of the wok, scrambling them until fully cooked. Once done, mix everything in the pan together.
Add the cooked rice and the reserved chicken to the wok. Pour the soy sauce and sesame oil over the mixture. Stir-fry everything together for about 5-7 minutes until heated through and well combined.
Sprinkle the chopped green onion on top and stir to mix in. Adjust seasoning if necessary.
For the best flavor, ensure the rice is cold and dry before using it.
You can customize this recipe by adding other proteins like shrimp or tofu, and different vegetables based on your preference.
If you want a spicy version, add some chili sauce or red pepper flakes.
