Ingredients
  

  • 2 pieces boneless, skinless chicken breasts About 1 pound.
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • to taste salt and pepper
  • 1 piece red bell pepper Sliced.
  • 1 piece green bell pepper Sliced.
  • 1 piece onion Sliced.
  • 4 cups romaine lettuce Chopped.
  • 1 cup cherry tomatoes Halved.
  • 1/2 cup corn Fresh or canned.
  • 1 piece avocado Sliced.
  • 1 piece lime For juice.
  • 1/4 cup cilantro Chopped.
  • 1/2 cup shredded cheese Optional, cheddar or Mexican blend.
  • 1/4 cup sour cream or yogurt Optional.

Instructions
 

  • Preheat your grill or grill pan over medium-high heat.
  • In a small bowl, mix together the olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper to make a marinade.
  • Coat the chicken breasts with the marinade, ensuring they are well covered. Allow to marinate for at least 10 minutes.
  • Grill the chicken for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F). Once cooked, remove from the grill and let it rest for a few minutes before slicing it into strips.
  • On the grill, add the sliced bell peppers and onions. Grill for about 3-5 minutes until they soften and have grill marks.
  • In a large mixing bowl, combine the chopped romaine, grilled chicken strips, grilled bell peppers and onions, cherry tomatoes, corn, and avocado.
  • Drizzle with lime juice, and toss gently to combine. Top with chopped cilantro, and add cheese or sour cream if desired.
  • Serve immediately on individual plates.

Notes

For added flavor, you can also add black beans or jalapeños.
This salad can be enjoyed warm or cold, making it a great option for meal prep.
Leftover chicken can be refrigerated and used in wraps or sandwiches.
