Preheat your oven to 400°F (200°C).
In a large skillet over medium heat, combine the shredded chicken, corn, black beans, diced bell peppers, half of the shredded cheese, cumin, garlic powder, salt, and pepper. Cook for about 5-7 minutes until heated through.
In a separate bowl, prepare the cornbread mix according to the package instructions by combining the cornbread mix, milk, and egg. Mix until just combined.
Pour the chicken and vegetable mixture into a greased 9x13 inch baking dish, spreading it evenly across the bottom.
Spoon the cornbread batter over the chicken mixture. Gently spread it out to cover the surface.
Sprinkle the remaining shredded cheese on top of the cornbread layer.
Bake in the preheated oven for about 30-35 minutes, or until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
Remove from the oven and let it cool for about 5 minutes before serving.
