- 2 large chicken breasts About 1 lb total.
- 8 oz fresh mozzarella cheese Sliced.
- 4 medium ripe tomatoes Sliced.
- 1 cup fresh basil leaves
- 4 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- to taste salt
- to taste pepper
- 2 tablespoons balsamic glaze For drizzling.
Preheat the grill or grill pan over medium-high heat.
Season the chicken breasts with olive oil, salt, and pepper on both sides.
Grill the chicken for about 5 minutes on each side, or until cooked through and juices run clear. Remove from the grill and let rest for a few minutes.
While the chicken is resting, arrange the slices of mozzarella and tomatoes on a serving platter, alternating them in a circle.
Slice the grilled chicken into strips and place on top of the mozzarella and tomatoes.
Scatter the fresh basil leaves over the salad.
In a small bowl or jar, whisk together the remaining olive oil and balsamic vinegar, then drizzle over the salad.
Finish with a drizzle of balsamic glaze for added flavor.
To add extra flavor, marinate the chicken in olive oil, garlic, and herbs for a couple of hours before grilling.
This salad is best served immediately but can be stored in the refrigerator for up to 1 day.
You can substitute the mozzarella with burrata for a creamier texture.
