Ingredients
  

  • 12 oz pasta penne or rotini preferred.
  • 2 tablespoons olive oil
  • 1 lb chicken breast, diced
  • 6 oz bacon, chopped
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • fresh parsley for garnish (optional)

Instructions
 

  • Begin by cooking the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  • In a skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with garlic powder, onion powder, salt, and pepper. Cook for about 6-8 minutes or until the chicken is fully cooked and no longer pink.
  • In the same skillet, add the chopped bacon and cook until crispy, about 5-7 minutes. Drain the excess fat once crispy.
  • Reduce the heat to low and return the cooked chicken to the skillet. Pour in the ranch dressing and add the cooked pasta, cherry tomatoes, and half of the cheddar cheese. Stir to combine until well-coated and heated through.
  • Sprinkle the remaining cheddar cheese on top and let it melt for a couple of minutes.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Feel free to customize this recipe by adding vegetables like spinach or broccoli for added nutrition.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop.
