Ingredients
  

  • 1 pound chicken thighs, boneless and skinless
  • 1 cup buttermilk For marinating the chicken.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 cup all-purpose flour For dredging the chicken.
  • 1/2 cup cornmeal For dredging the chicken.
  • 2 cups oil For frying chicken.
  • 2 cups all-purpose flour For waffle batter.
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter Melted for waffle batter.

Instructions
 

  • In a large mixing bowl, combine buttermilk, salt, pepper, paprika, and garlic powder. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes.
  • In another bowl, mix together the flour and cornmeal. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour-cornmeal mixture, pressing lightly to adhere.
  • In a frying pan or deep fryer, heat oil to 350°F (175°C).
  • Carefully place the chicken in the hot oil, cooking in batches to avoid overcrowding. Fry for about 5-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F (74°C). Remove and place on a baking sheet lined with a cooling rack.
  • Preheat the waffle iron. In a bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, beat the eggs and add milk and melted butter. Combine the wet and dry ingredients, mixing until just combined.
  • Pour the batter into the preheated waffle iron, according to the manufacturer's instructions. Cook until golden brown and crisp.
  • Plate a waffle and top with a piece of fried chicken. Drizzle with maple syrup and add optional butter or whipped cream as desired.

Notes

For extra crunch, you can double-dip the chicken in the wet and dry mixtures.
Serve with a side of fresh fruit for added freshness.
You can use different cuts of chicken, but ensure they are fully cooked through.
