- 2 lbs chicken thighs, bone-in and skin-on You can use chicken breast instead of thighs if you prefer lean meat, but thighs add more flavor.
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1/2 cup water
- 1 medium onion, sliced
- 6 cloves garlic, minced
- 2 leaves bay leaves
- 1 teaspoon black peppercorns
- 1 tablespoon vegetable oil
- 1 teaspoon sugar (optional)

In a large mixing bowl, combine the chicken, soy sauce, garlic, and black peppercorns. Marinate for at least 15 minutes to enhance the flavor.
Heat the vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat. Add the sliced onion and sauté until softened.
Remove the chicken from the marinade (reserve the marinade) and add it to the pot. Brown the chicken on all sides for about 5-7 minutes.
Pour in the reserved marinade, vinegar, and water. Add bay leaves and stir to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally.
After 30 minutes, uncover and let it simmer for an additional 10-15 minutes to allow the sauce to reduce to a thicker consistency. If desired, add sugar and salt to taste.
Serve the Chicken Adobo hot, garnished with chopped green onions if desired, alongside cooked rice.
