Ingredients
  

  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1 whole jalapeño, seeded and minced For a milder salsa, omit or replace with a bell pepper.
  • 1/4 cup fresh cilantro, chopped
  • 1 whole lime, juiced Ensure to catch any seeds.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Begin by washing the cherry tomatoes. Cut them in half and place them in a mixing bowl.
  • Finely chop the red onion and add it to the bowl with the tomatoes.
  • Seed and mince the jalapeño pepper, then stir it into the mixture.
  • Chop the fresh cilantro and add it to the bowl.
  • Squeeze the juice of one lime over the mixture, ensuring you catch any seeds.
  • Sprinkle in the salt and black pepper.
  • Gently toss all the ingredients together until everything is well combined.
  • Taste and adjust the seasoning if necessary, adding more salt, lime juice, or jalapeño according to your preference.
  • Let the salsa sit for about 10 minutes to allow the flavors to meld before serving.

Notes

For a milder salsa, omit the jalapeño or replace it with a bell pepper.
This salsa can be stored in the refrigerator for up to 2 days in an airtight container but is best enjoyed fresh.
Serve with tortilla chips, atop grilled chicken or fish, or as a topping for tacos.
