Ingredients
  

  • 2 medium zucchinis About 400 grams.
  • 1 cup shredded mozzarella cheese About 100 grams.
  • ½ cup grated Parmesan cheese About 50 grams.
  • 1 large egg
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • to taste salt
  • to taste pepper
  • ½ cup breadcrumbs About 50 grams.
  • for garnish fresh parsley Optional.

Instructions
 

  • Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  • Grate the zucchinis and place them into a clean kitchen towel or cheesecloth. Squeeze out the excess moisture to ensure the bites are not too watery.
  • In a mixing bowl, combine the squeezed zucchini, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, oregano, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  • Stir in the breadcrumbs until the mixture is sticky enough to form into small bites.
  • Using your hands, scoop out portions of the mixture and shape them into small rounds or patties. Place them evenly on the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes or until they are golden brown and crispy on the outside.
  • Once done, remove from the oven and let cool for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

You can customize the flavor by adding other herbs or spices to the mixture.
These cheesy zucchini bites can be served with marinara sauce or a dipping sauce of your choice.
Leftovers can be stored in an airtight container in the refrigerator for up to three days and can be reheated in the oven for the best texture.
