Ingredients
  

  • 4 medium zucchinis About 1.5 lbs.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • for garnish, optional fresh parsley

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Wash and slice the zucchinis into ¼-inch thick rounds.
  • In a large mixing bowl, combine the shredded mozzarella cheese, grated Parmesan cheese, breadcrumbs, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly coated.
  • In a greased baking dish, spread the sliced zucchini evenly across the bottom.
  • Sprinkle the cheesy breadcrumb mixture over the zucchini slices, ensuring they are well covered.
  • Bake in the preheated oven for 25 minutes, until the top is golden brown and the zucchini is tender.
  • Remove from the oven and allow to cool slightly before garnishing with fresh parsley, if desired.

Notes

Feel free to add other vegetables like diced tomatoes or bell peppers for extra flavor and nutrients.
This dish can be stored in an airtight container for up to 3 days in the refrigerator.
