1 oven
- 2 cups cooked and shredded chicken about 2 medium-sized chicken breasts
- 1 cup cream cheese softened
- 1 cup sour cream
- 1 cup shredded Monterey Jack cheese
- 1 cup chicken broth
- 1 can (10 oz) diced green chilies
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 12 small flour tortillas
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- ½ cup additional shredded cheese for topping
- N/A N/A Fresh cilantro for garnish (optional)
Preheat the oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the shredded chicken, garlic powder, onion powder, salt, and black pepper. Stir and cook for 3-4 minutes until heated through.
In a mixing bowl, combine the softened cream cheese, sour cream, and chicken broth. Whisk until smooth and fully incorporated. Add the diced green chilies and mix well.
Take a tortilla and place a generous scoop of the chicken mixture in the center. Roll up the tortilla tightly and place it seam-side down in the baking dish. Repeat for the remaining tortillas.
Once all the enchiladas are arranged in the baking dish, pour the cream sauce evenly over the top. Sprinkle additional shredded cheese over the sauce.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.
For a spicier version, you can add diced jalapeños to the chicken mixture.
These enchiladas can be made ahead of time and stored in the refrigerator before baking. Just adjust the baking time if baking directly from the fridge.
Serve with a side of black beans and a simple green salad for a complete meal.
