Ingredients
  

  • 12 ounces cheese tortellini Fresh or frozen.
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese Divided into two portions.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • fresh basil or parsley Optional, for garnish.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cook the tortellini in a large pot according to package instructions. Drain and set aside.
  • In a mixing bowl, combine the cooked tortellini, marinara sauce, ricotta cheese, half of the mozzarella cheese, Italian seasoning, garlic powder, salt, and pepper. Stir until well combined.
  • Transfer the mixture into the prepared baking dish. Spread it evenly.
  • Top the mixture with the remaining mozzarella cheese and the grated Parmesan cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
  • Remove from the oven and let it cool for a few minutes.
  • Garnish with fresh basil or parsley if desired before serving.

Notes

Feel free to add vegetables like spinach or bell peppers to the tortellini mixture for extra nutrition and flavor.
For a bit of spice, consider adding red pepper flakes to the marinara sauce.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
