- 1 cup orzo pasta Uncooked.
- 2 cups vegetable broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 small onion Finely chopped.
- 2 cloves garlic Minced.
- 1 cup baby spinach Roughly chopped (optional).
- Salt To taste.
- Pepper To taste.
- Fresh basil Chopped (for garnish).
In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
Add the minced garlic and sauté for another 1-2 minutes until fragrant.
Stir in the orzo pasta and toast it gently for 1-2 minutes, stirring constantly.
Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let simmer for about 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed.
Remove the saucepan from heat and stir in the shredded mozzarella and grated Parmesan cheese until melted and creamy.
If using, fold in the chopped spinach until wilted. Season with salt and pepper to taste.
