In a mixing bowl, combine the warm water, yeast, and sugar. Let it sit for about 5 minutes until bubbly and frothy.
Stir in the olive oil, flour, and salt. Mix until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for 30 minutes or until doubled in size.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Once risen, punch down the dough and roll it out on a floured surface into a rectangle, about ½ inch thick.
Cut the dough into 8 strips using a knife or pizza cutter.
In a small bowl, combine melted butter, minced garlic, oregano, and parsley. Brush this mixture over each breadstick.
Sprinkle the mozzarella and Parmesan cheeses generously on top of the breadsticks.
Bake in the preheated oven for 12-15 minutes or until golden brown and the cheese is bubbly.
Remove from the oven and let cool slightly before serving.
